RECIPE: PASSION FRUIT BOOCH-TINI
This mindful take on the passionfruit martini, gets its fizz from gut-friendly kombucha. Perfect for the holiday season.
2 ripe passion fruits, halved
1 tablespoon lime juice
1/2 teaspoon vanilla extract
50ml passion fruit puree
Kombucha (regular flavour) to top - approximately 250ml
Scoop the seeds from two halves of the passion fruits into a cocktail shaker.
Add the lime juice, vanilla extract and passion fruit puree and a handful of ice.
Shake well and strain into two martini glasses.
Top with the kombucha and add half a passion fruit to each glass. Option to serve an extra shot of kombucha on the side.
